Low Acidic Coffee:

We are proud to present our organic quality coffee from small independent farmers located in prestigious regions of the world.  We use the finest high-altitude Arabic coffees for a rich quality flavor.  Our coffee beans are high quality grade and low acidity… because your health is important !!! Mycotoxins are commonly found in low quality coffee. This is because companies use lower quality beans that have higher concentrations of mold and they use processing techniques to add flavor that increase the amounts of mold.

SHADE GROWN vs. FULL SUN GROWN Our coffee is shade-grown which means small plantation lies in the mountains at an elevation of 5700 feet in the covering of  trees.  Regulated shade keeps humid environments in dry periods, favors flowering and prevents the risk of erosion.  These shade trees provide nutrients and help the environment and soil conservation. Full sunlight growing requires the use of synthetic fertilizers, herbicides and insecticides to protect the coffee plants from more pests Shade grown process is expensive but oh so worth your health!!

Shade grown coffee is free from inpurities Technified coffee farming is a big corporation and is not a hand picking method like shade grown coffee. The shade trees filter carbon dioxide that causes global warming.  Healthier air! Shade grown coffee is the more traditional approach that mimics the natural way coffee used to grow, underneath a forest canopy.  While sun-grown coffee produces higher yields, and subsequently gives the farmers a higher profit, it has an adverse affect on the ecosystem and on coffee quality.

 

ROASTING STYLES AND STRENGTHS:

 

GRINDING SUGGESTIONS: Grinding the coffee as you go will keep the quality and freshness.   If possible, purchase whole coffee beans and grind just before your brew or grind enough to only last a few days.

Grind size has a tremendous effect of the brew outcome as the water flows through the grounds.  The grind size matters, as this will expose the bean and benefit the flavor compounds, solid and oils. A light roast= grind the beans finer to achieve a deeper extraction French Press= requires a coarse grind. Espresso= requires a fine grind.
